What is the difference between Jun and Kombucha?
The distinguishing factor between Jun and Kombucha lies in how they ferment. Jun cultures ferment with honey, whilst kombucha cultures ferment with cane sugar. The reason we have come to prefer Jun is that honey results in what we feel is a "gentler" and "less vinegary" flavor profile, which has often been received as preferable and allows a more complex flavor profile.
